JOB DESCRIPTION JOB TITLE : Bar Supervisor DEPARTMENT : Food & Beverage Department GRADE/LEVEL : Supervisor REPORTS TO : Assistant Bar Manager RESPONSIBLE FOR : Bartenders SUBSTITUTES BY : Bar Supervisor, Head Bartender SCOPE : To help the assistant bar manager in managing the bar as a successful independent profit center. To supervise service and bartender, as well as help guests within the bar to maximize guest satisfaction and food and beverage profitability as per standards set by Kempinski. DUTIES/ RESPONSIBILITIES : · To ensure that guests receives quality service by providing clear and understandable work direction for bar staff. · To supervise bartenders and wait staff, verifying that their workstations are stocked neat and orderly. · To ensure that the bar is ready for guests by checking overall condition of bar regularly. · To ensure that the bar premises is in neat and orderly condition at all times. · To be aware of the service sequence and to correct the wait staff and bartenders if necessary. · To provide guests with quality service by monitoring staff assignments and responsiveness. · To perform all service duties of the bar. · To coach staff to achieve bar revenue goals. · To greet and seat guests, and make sure that they receive prompt, courteous and efficient service. · To keeps bar premises, Furniture Fixtures & Equipment (FF&E), silver, glass, porcelain etc. clean and in good working order. · To approach guests suggesting a cocktail/wine or non-alcoholic beverages and recommending promotional items. · To actively push high profit food and beverage items, and informs staff of such to increase sales. · To use approved suggestive selling techniques to up sell products with higher profit margin. · To maintain knowledge of bar inventory and wine selection to respond properly to guest questions. · To maintain a thorough knowledge of beverage recipes and mixing procedures. · To be able to entertain the guests with freestyle, mixology and creating cocktails. · To be able to create new cocktails on the spot. · To have an extensive knowledge of cocktails and mocktails. · To inform guests of last call. · To maintain proper bar cleanliness. · To assist in maintaining responsibility for the set up and cleanliness of entire bar and adjoining lounge area at all times. · To arrange furniture in the bar area as needed. · To stock all supplies, silverware, china and glassware ordered by the bar management team. · To display beverage selection in an attractive manner. · To ensure that the bar is stocked with “mise-en-place” and kept clean and tidy at all times. · To have thorough knowledge of how to handle intoxicated individuals. · To ensure that bar guests receive their orders promptly and courteously. · To know how to accurately records guest orders and serves beverage orders. · To ensure proper garnishing of drinks. · To check periodically with guests to see if they would like anything else. · To process guest checks accurately. · To have full knowledge of alcohol and liquor policies and regulations, and complies fully with them. · To maintain the bar reservation list, and check the bar reservations list frequently during the shift. · To utilize supervisory skills, effective communication, and motivation to maximize employee productivity and satisfaction. · To have a thorough understanding and knowledge of all food and beverage items in the menu and the ability to recommend Food & Beverage combinations and up sell alternatives. · To establish correct cash handling procedures, process all guest orders through MICROS before any dish or food is served. · To assist in planning the bar weekly working schedules to ensure that the bar is adequately staffed to handle the level of business. · To submit all guest / staff incident reports. · To report “Lost & Found” items and handle them in accordance to the Policy & Procedures. · Attends work on time as scheduled. · Follows hotel grooming and dress standard. · Acquires a working knowledge of hotel, in-house facilities and local information to respond to guest questions in these areas as required. · To handle all food, beverage and operating equipment with care, in order to minimize breakage / wastage · Ability to rotate throughout each of the food & beverage outlets · Understands that business demands sometimes make it necessary to move employees from their accustomed shifts to other shifts. · Performs all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve overall objectives of this position. · To understand and strictly adhere to the Rules & Regulations established in the Employees Handbook and the Hotel’s policy on Fire, Hygiene, Health & Safety. · To ensure that all potential and real hazards are reported and rectified immediately. · To understand and strictly adhere to the Hotel’s Employee rules & regulations. · To report for duty punctually wearing the correct uniform and name tag at all times. · Performs any other duties as assigned to him/her by management. JOB PROFILE : EDUCATION : High School Graduate or equivalent, preferably with a specialization in Hotel/Restaurant. EXPERIENCE : 3 years experience as a Bar Captain/Supervisor in a five star hotel COMPETENCIES : TECHNICAL COMPETENCIES : · Knowledge of cashier operations · Knowledge of hotel business operations INDIVIDUAL CHARACTERISTICS : · Adaptability · Conflict Management · Entrepreneurial Orientation · Stress Management · Motivating Others · Interpersonal Skills · Flexibility in the scheduling · Customer service orientation · Cross cultural sensitivity · Teamwork / co-operation · Listening and oral skills · Basic writing skills · Enthusiastic and pleasant personality · Able to exert fast-paced mobility for period of up to 4 hours in length. · Strength to lift trays frequently weighing up to 10 kilos.
